I was looking for a moderately light snack tonight filled with nutrients and had a refrigerator stocked with vegetables.
Ingredients:
- 3 Vine-ripened tomatoes
- Half-cup sliced Parmesan cheese
- 1/4 cup extra virgin olive oil
- Juice of one lime
- Large carrot, diced
- 1 cup diced baby portobello mushrooms
- 5 mint leaves
- 1 shallot
- Salt, pepper, garlic powder to taste
In a large mixing bowl, combine chopped tomatoes (cut in small wedges), with the remaining ingredients, along with diced mint leaves.
Let stand for 15 minutes at room temperature before serving.
Serves 4.
Substitutions: Mint with cilantro, Parmasean with Asiago
Extra ingredients to consider: sweet kernel corn (canned or fresh), asparagus spears
